The Queso de Flor de Guía is one of Spain's most distinctive artisan cheeses, holding Protected Designation of Origin (PDO) status. Made in the municipality of Santa María de Guía and surrounding areas (Moya and Gáldar), this semi-hard cheese is produced using a unique vegetal rennet from the flower of the cardoon thistle (Cynara cardunculus) — a technique dating back centuries. The result is a cheese with a characteristic slightly bitter, herbal flavour and creamy texture. Three varieties exist: semi-cured (tierno), cured (curado), and a mixed version using both cow and sheep milk (media flor). Several family-run cheese dairies (queserías) in Santa María de Guía offer direct tasting and purchase: Quesería de Guía (the largest, with a visitor centre), Quesos La Gloria, and Quesos San Mateo. The annual Fiesta del Queso (Cheese Festival) is held in Santa María de Guía each May, drawing cheese makers from across the Canary Islands. Pair with locally baked bread (pan de puño) and a young red wine from the Gran Canaria D.O.
